Ingredients

The ingredients are:
  • 10 sundried tomatoes, oil packed (approximately, fine chopped)
  • 1 small shallot, fine diced
  • 1 scallion, fine diced (white and green parts)
  • 2 to 3 garlic cloves, minced
  • 1 teaspoon mustard, dijon
  • 1/4 cup white wine vinegar
  • 1/3 cup oil (olive oil)
  • 2 tablespoons basil, minced
  • Salt to taste
  • Pepper to taste

How to Make

  • Step 1: Dressing ... Add everything, except the salt and pepper to a small tupperware container and shake; or, do the conventional way - in a bowl or measuring cup and mix until well combined. Taste, and season with salt and pepper; shake again. It's done; let it rest 15-30 minutes before serving.

  • Step 2: Serve and ENJOY! ... Drizzle the vinaigrette over grilled shrimp, scallops, swordfish, salmon, grouper, or cod; chicken, pork or beef. It is a simple condiment - which is very simple to prepare. Absolutely delicious!
