  • 1 cup brown sugar (firmly packed light brown sugar)
  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup all-purpose flour (unsifted)
  • 1 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup zucchini (peeled and diced)
  • 1/3 cup nuts (chopped)
  • 1/4 cup butterscotch baking chips (morsels)

How to Make

  • Step 1: Pre-heat oven to 350F. Grease and flour a 9x9-inch baking pan. (an 8x8-pan can be used but baking time may need to be increased.

  • Step 2: In a large pan melt margarine with water.

  • Step 3: Add sugar and beat well. Let mixture cool.

  • Step 4: Add egg and vanilla; beat.

  • Step 5: Mix dry ingredients together and add to sugar mixture.

  • Step 6: Stir in zucchini and nuts.

  • Step 7: Pour into pan and sprinkle with morsels.

  • Step 8: Bake 20-25 minutes.

  • Step 9: Cool in pan and cut into bars.
