  • 4 cups zucchini (2 large, cut into half-circles about 1/2 inch thick)
  • 2 teaspoons mustard, Dijon
  • 2 tablespoons vinegar (red wine vinegar)
  • 2 tablespoons lemon juice (fresh)
  • 1 tablespoon shallots (finely chopped)
  • 1 tablespoon oil (extra virgin olive oil)
  • 2 tablespoons fresh basil (chopped)
  • 1 tomato, large (fresh tomato, diced)
  • 1/4 teaspoon freshly ground black pepper

How to Make

  • Step 1: Place zucchini slices in a microwave steamer and cook on high for 4-5 minutes, until vegetables are crisp-tender and their colours are bright.

  • Step 2: Immediately plunge zucchini into cold water to prevent further cooking, then drain thoroughly.

  • Step 3: Whisk together Dijon, vinegar and lemon juice; add shallots, oil and basil and whisk to combine well. (Dressing can be made up to 5 days in advance and refrigerated).

  • Step 4: Toss zucchini with dressing; stir in tomatoes and pepper.

  • Step 5: Can be served immediately or chilled until ready to serve.
