Step 1: Heat 3 tbsp olive oil in a saucepan. Add onion. Cook until the onion have softened stirring occasionally. Add minced garlic and cook 2 minutes.
Step 2: Add in all remaining ingredients. Cook 1 1/2 hours. Stirring a few times while sauce is cooking.
Step 3: Cool the sauce.
Step 4: Puree the sauce in a food processor or with an immersion blender.
Step 5: Refrigerate 24 hours before you use it.
Step 6: Use with any meat or chicken.
