Ingredients

The ingredients are:
  • 1 tablespoon oil (peanut oil)
  • 1 tablespoon unsalted butter
  • 1 pound russet potatoes (or Yukon gold potatoes peeled and diced)
  • 1/2 cup chopped bell pepper (mini sweet peppers)
  • Salt and freshly ground peppers to taste
  • 1/4 cup chopped chives (fresh)

How to Make

  • Step 1: Heat oil in a medium frypan over medium high heat until shimmering. Add butter and swirl in frypan to keep from burning. Add potatoes in a single layer.

  • Step 2: Reduce heat to medium and saute potatoes without stirring until golden brown on edges, 8 to 10 minutes. Stir potatoes, then cook until golden brown,8 minutes more, stirring occasionally to brown all sides. Add peppers and saute until softened , 2 minutes. Season potatoes with salt and freshly ground black pepper; stir in the chives.
