  • The following recipe serves 2 people.

Ingredients

The ingredients are:
  • 3/4 cup pasta, uncooked ( I used elbow macaroni,but use whatever you have on hand)
  • CHEESE SAUCE
  • 4 Tablespoons butter (divided, or margarine)
  • 1/3 cup onion, sweet (finely chopped, or use whatever you have on hand)
  • 3 tablespoons flour
  • 1 1/2 cups milk
  • 4 ounces cheese, processed (Velveeta cubed)
  • 3/4 teaspoon salt, or to taste
  • 3/4 teaspoon ground black pepper, or to taste
  • 1 1/4 cup cubed cooked ham
  • OPTIONAL INGREDIENTS
  • 1/2 cup cheddar cheese, sharp (shredded, optional)
  • 1 1/2 teaspoons paprika, optional (sweet paprika)

How to Make

  • Step 1: Cook pasta according to package directions,drain and set aside.

  • Step 2: In the same pan over low heat melt 2 Tablespoons of margarine,add onions and cook until tender.

  • Step 3: Add remaining margarine and melt,then add flour and cook until flour taste has disappeared.

  • Step 4: Stir in milk a little at a time, until desired thickness is reached.

  • Step 5: Remove from heat and add cubed Velveeta,stirring until completely blended.

  • Step 6: Add salt,pepper & whatever other seasonings you might be using.

  • Step 7: Stir in cooked pasta and ham until well coated.

  • Step 8: Pour into a 2 quart rectangular baking dish which has been prepared with cooking spray.

  • Step 9: If using optional ingredients,sprinkle top of casserole with cheese and paprika.

  • Step 10: Bake at 350 degrees for 45 minutes, or until golden brown.
