Ingredients

The ingredients are:
  • 1 cup cornmeal, extra fine, ground (“Halls or Hoovers”)
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 cup water (heat to boiling)
  • 1 egg, large
  • 1/4 cup evaporated milk
  • Oil (for frying)

How to Make

  • Step 1: Mix cornmeal, salt and baking powder together, set aside side.

  • Step 2: Bring water to a boil in microwave. Add boiling water to the cornmeal mixture and stir well. (the boiling water will start the cooking process before you fry it).

  • Step 3: Add egg and evaporated milk until well mixed. The batter should be like a waffle batter, thick but pliable.

  • Step 4: You can wet hands and shape into submarine shaped ovals and drop into hot oil like Granny did (you must keep hands wet or batter will stick to hands). Or drop by spoon fulls or use a cookie/ice cream scoop. I use a medium cookie scoop. If you use a cookie scoop and deep fry it you don’t have to turn them. They should “turn” on their own. Sometimes they may not, so keep a close eye on them.

  • Step 5: Brown on all sides and remove.

  • Step 6: I place mine in a wire basket on paper towels inside a baking pan to drain off excess oil and to keep them crispy. The longer you fry them the more crispy they get.

  • Step 7: Serve and enjoy!
