Step 1: Chicken ... Remove the chicken from the refrigerator, and season with salt and pepper on both sides. Note: If using thighs, I like to cut those in half; for the breasts, I like to cut those in 3 pieces. Basically, you want all the chicken in equal size pieces.
Step 2: Sauce ... Add all the ingredients (except salt and pepper) to a small bowl, and mix to combine. Set to the side
Step 3: Crock Pot ... Add the chicken, onion, and peppers to the crock pot; top with the sauce, and mix to combine. The pineapple chunks will be added the last 30 minutes of cooking. Season lightly with salt and pepper, but don't mix in. Remember, your chicken is already seasoned; and, you can always re-season later.
Step 4: Cook ... Put the lid on, and cook 4-6 hours on low heat. My larger crock pot takes right about 4 hours; my smaller crock, 6 hours. All crock pots cook differently, so you just have to check.
Step 5: Finish ... Once you check the chicken, and see that it is just about done; add the pineapple chunks, stir to combine, season if necessary, with additional salt and pepper, cover; and, cook another 20-30 minutes.
Step 6: Serve and ENJOY! ... I like to serve this family style over a platter of rice. Using a slotted spoon, scoop out the chicken, vegetables, and pinapple; and top the rice. Pour the sauce over the chicken; and garnish with the scallions if you want. As I mentioned; a simple salad on the side is all you need.
