  • 2 eggs (large)
  • 1 cup brown sugar, packed
  • 2 teaspoons vanilla
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 1/2 cups coconut, sweet, flaked
  • 1 cup walnuts, chopped (or pecans)

How to Make

  • Step 1: Preheat oven to 350F.

  • Step 2: Grease an 11x7 inch baking pan.

  • Step 3: In a food processor combine crust ingredients; process until crumbly. Press into a 13x9x2-inch baking pan. Bake 10 minutes.

  • Step 4: For filling. Mix together the eggs, 1 cup brown sugar, vanilla, 2 tablespoons flour, and baking powder. Stir in coconut and nuts. Spread onto the hot or warm crust and bake for 20 minutes longer.
