Step 1: Season shrimp. Heat a large frypan over medium high heat; add 1/2 tablespoon butter and the shrimp. Cook shrimp through 1 to 2 minutes just until turned pink, transfer to a plate. Over medium low heat melt 1 tablespoon butter; add the shallots, lime juice and crushed pepper; cook 2 minutes. Add remaining butter, zest and return the shrimp to the pan; add the cilantro; toss well and serve.
