Ingredients

The ingredients are:
  • CHEESE
  • 4 ounces cheddar cheese (sharp)
  • 4 ounces monterey jack cheese
  • 8 ounces cream cheese
  • MARINADE
  • 1/2 cup olive oil
  • 1/2 cup vinegar (white wine vinegar)
  • 1 teaspoon sugar
  • 3 garlic cloves, pressed
  • 1 to 2 scallions (3-4 tablespoons, diced white and green parts)
  • 2 tablespoons sun dried tomatoes (in oil), fine chopped
  • 2 ounces pimentos, drained and diced (one 2 ounce jar)
  • 3 tablespoons fresh parsley, chopped
  • 1/2 tablespoon fresh oregano, chopped
  • 1 teaspoon fresh mint, chopped
  • 3/4 teaspoon dried basil
  • 1/4 teaspoon salt, to taste
  • 1/4 teaspoon pepper, to taste

How to Make

  • Step 1: Cheese ... Put the cream cheese in the freezer for 30-45 minutes. It is much easier to handle when firm. Then, cut all the cheese in 1/4" slices, then again in half. You will end up will small squares that will fit perfectly on a cracker.

  • Step 2: Arrange ... In a small serving dish, one that has sides, so the marinade will not spill out; stack the cheese - standing up, or on end, alternating cream cheese, cheddar, and monterey jack cheese. Alternate them however you like. I like to make the rows about 8" long, then make another one. It's like putting a loaf of garlic bread together. One piece after another ... but, the cheese makes it easy - they stick together. Sometimes, with the last couple of pieces, I will stick a toothpick through the end, just to hold them together. It isn't necessary, but it can help.

  • Step 3: Marinade ... Add all the ingredients to a small bowl, and mix to combine. Then pour the marinade over the cheese, cover with plastic wrap; and, refrigerate at least 8 hours, but best after 24 hours before serving. If you can, after 4-6 hours, remove from the refrigerator, and spoon some of the marinade in the dish over the cheese. Cover it back up and refrigerate until ready to serve. It isn't necessary, but it is nice to do if you have the time.

  • Step 4: Serve and ENJOY! ... Make sure to remove at least 30 minutes to 1 hour before serving. It is really best served at room temperature. Spoon some of the dressing over the cheese; and, serve with a variety of crackers, and toasted baguettes. DELISH!!!! It takes a little time, but nothing difficult. It is well worth it!! Your guests will be very impressed. Garnish with some fresh herbs.
