Step 1: Peel the potatoes; immerse them in cold water until ready to use.
Step 2: Grate the onions, using the larger holes, into a large bowl and set aside.
Step 3: Grate the potatoes using the small/medium holes into a colander; press the grated potatoes down to squeeze out as much liquid as possible.
Step 4: Mix the grated potatoes with the onions then mix in the egg and flour. Sprinkle with salt and pepper.
Step 5: Heat, over medium-well, 1" oil in a heavy fry pan. When the oil is hot, drop 2-3 Tb of mix and flatten.
Step 6: Fry until golden and crisp on both sides.
Step 7: Drain on paper towels.
Step 8: May keep warm in a 200F oven.
