The ingredients are:
  • 1 cup oats (quick-cooking rolled oats not instant)
  • 1/2 cup cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 3/4 cup granulated sugar
  • 1/4 cup flax meal (it's the ground flax not the seeds, or wheat germ)
  • 1 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 to 1 teaspoon ground cinnamon (optional)
  • 1 1/2 cups mashed bananas (ripe bananas about 3 large or 4 small)
  • 1/4 cup melted butter
  • 1 large egg
  • 1 1/2 cups blueberries (fresh or frozen blueberries)

How to Make

  • Step 1: Preheat oven to 375°F.

  • Step 2: Spray a 12-cup muffin tin with cooking spray and set aside.

  • Step 3: Combine oats, both flours, sugar, ground flax, baking powder, baking soda, salt and cinnamon in a large bowl. Mix well and set aside.

  • Step 4: In a medium bowl whisk together mashed bananas, melted butter and egg. Add banana mixture to dry ingredients and stir just until dry ingredients are moistened. Gently fold in blueberries.

  • Step 5: Divide batter among 12 muffin cups.

  • Step 6: Bake for 20 minutes, or until a wooden pick inserted in the center comes out clean.

  • Step 7: Cool on a wire rack.
