Ingredients

The ingredients are:
  • 4 zucchini (medium zucchini sliced thinly leaving the skin on)
  • 1/2 onion chopped
  • 2 garlic cloves, minced
  • 16 ounces pork sausage (one package of Jimmy Dean Sausage)
  • 1 cup baking mix (Bisquick)
  • 1/4 cup milk
  • 1/3 cup vegetable oil
  • 4 whole eggs (beaten)
  • 3/4 cup grated cheddar jack cheese
  • Salt and Pepper to taste

How to Make

  • Step 1: Grease a 9x9 pan with cooking spray.

  • Step 2: Layer the zucchini slices in the bottom of the pan.

  • Step 3: Sprinkle the onion on top of the zucchini.

  • Step 4: Cook and brown the sausage meat with garlic; drain off any excess grease.

  • Step 5: Put the sausage on top of the zucchini and onion.

  • Step 6: Salt and pepper the layers.

  • Step 7: In a mixing bowl, mix together the Bisquick, milk, egg and oil till smooth.Pour on top of the zucchini and sausage layers.

  • Step 8: Sprinkle the cheese on top.

  • Step 9: Bake in a preheated 350 degrees oven for 30 to 40 minutes or until it looks golden on top.

  • Step 10: Let it sit for 5-8 minutes before serving.
