Ingredients

The ingredients are:
  • 1/2 pound boneless skinless chicken breasts (2 breasts, rinsed and cut into cubes)
  • 1 jalapeno pepper (large jalapeno sliced thin)
  • 2 habanero pepper (sliced thin)
  • 1 1/2 cups water
  • 1 teaspoon salt
  • 2 tablespoons margarine (or butter)
  • 20 drops hot sauce (Louisiana sauce, heavy drops or Franks Red Hot sauce)
  • 1/4 teaspoon red cayenne pepper
  • Black eyed peas (1 can)
  • Dry instant potatoes (4 servings)

How to Make

  • Step 1: Cut up raw chicken breasts into cubes and put in a frying pan. Add sliced jalepeno, habanero, water and salt and stir.

  • Step 2: Add the margarine, hot sauce and sprinkle with cayenne pepper.

  • Step 3: Turn heat on to medium low and let simmer stirring occasionally for 40- 45 minutes. Heat can of black eyed peas in a sauce pan.

  • Step 4: Make instant mashed potatoes according to package directions and put a serving of mashed potatoes on a plate making a hole in the middle. Put blackeyed peas in hole and then top with a serving of the Habanero Chicken and some of the juice from the pan. Enjoy!
