Ingredients

The ingredients are:
  • 4 garlic cloves (do not mince)
  • 1 pound potatoes (Idaho or Yukon gold potatoes, scrubbed but not peeled)
  • 1/4 to 1/3 cup extra-virgin olive oil (or to taste)
  • Salt and freshly ground pepper

How to Make

  • Step 1: Place the potatoes in a large saucepan and add enough cold water to cover them by a few inches. Season the water with salt and bring to a boil. Cook until the potatoes are tender but still hold their shape, 15 to 30 minutes, depending on the size and shape. Drain the potatoes and let stand until cool enough to handle.

  • Step 2: Peel the potatoes and pass them through a potato ricer or a food mill. (You can instead mash them with a handheld potato masher). Set aside while making the next step.

  • Step 3: Pour the olive oil in a large skillet, add whole garlic cloves, and heat over medium-low heat until the garlic is softened and toasty at the edges. Remove to a small bowl and mash the garlic.

  • Step 4: Gently stir the garlic cloves into the mashed potatoes along with the olive oil.

  • Step 5: Season with salt and pepper.

  • Step 6: Serve.
