Step 1: Mix 1/2 the flour with the remaining dry ingredients.
Step 2: Add the water until it becomes thick, like a paper mache paste.
Step 3: Add more flour until the dough feels like a soft earlobe (I don't use all the flour most times)
Step 4: Heat oil or lard over medium heat until hot but not smoking.
Step 5: Break off a small pieces of dough and flatten each to the size of your palm, about 1/2" thick.
Step 6: Place pieces 2 or 3 at a time in the hot oil; turn after about 3 minutes, or golden brown.
Step 7: Fry second side until it is golden.
Step 8: Remove to paper towels to soak up excess grease.
Step 9: Serve plain or with jam etc.
