Ingredients

The ingredients are:
  • 4 cups watermelon (seedless watermelon, cut in cubes)
  • 1/3 cup apple juice (I like to use a natural apple juice)
  • 2 tablespoons fresh lime juice
  • 1/2 to 1 tablespoon honey
  • 1 teaspoon fresh mint, chopped
  • 1/4 to 1/2 teaspoon fresh ginger, grated (start off with 1/4 and add more if needed)
  • Pinch of salt
  • Garnish:
  • 1/2 cup yogurt (plain yogurt or vanilla Greek yogurt)
  • Fresh mint leaves

How to Make

  • Step 1: Soup ... Add the watermelon, apple and lime juice, honey - start with 1/2 tablespoon (1/2-1 tablespoon depending on how sweet the watermelon is), mint, and, 1/4 teaspoon of ginger to the blender; then, puree until smooth. At this point, you can add a bit more honey or ginger if you want. I always add less to start with, as you can always add more if needed. Also, add a pinch of salt, and pulse once more to incorporate all the flavors.

  • Step 2: Transfer to a bowl or pitcher, and cover with plastic wrap. Chill at least 1 hour until cold. I prefer to chill at least 4 hours, if possible.

  • Step 3: Finish and Serve ... I love to serve this in a wine or martini glass; then, garnish with a dollop of yogurt and a mint sprig. If you want to get fancy - a small skewer of small diced apples and watermelon; or a lime twist or wedge is also really nice. As mentioned. a nice starter dish, appetizer, 'shooters' for a party; or, a light lunch or dinner soup. Simply ENJOY!
