Ingredients

The ingredients are:
  • 1/4 to 1/3 cup canola oil
  • 1/2 cup onion (finely chopped sweet onion)
  • 2 cups hash browns (frozen cubed hash brown potatoes, lightly thawed)
  • 1 1/2 cups chicken (cooked)
  • 1 cup vegetables (mixed vegetables I used 1/2 cup corn & 1/2 cup peas)
  • 1 teaspoon ground black pepper
  • 1 1/2 teaspoons seasoning salt

How to Make

  • Step 1: Over medium heat in a medium sized non stick skillet heat oil until hot but not smoking.

  • Step 2: Add onion and cook until softened.

  • Step 3: Then add potatoes and chicken and mix with onions, sprinkle with seasoning salt and pepper.

  • Step 4: Cover with lid, stirring occasionally, cook until potatoes are slightly browned.

  • Step 5: Remove cover add peas and corn, cover with lid and cook until veggies are heated through.

  • Step 6: Remove cover, and cook until potatoes are a light to golden brown.
