Hi, Breezie! I prepared this simple pasta salad for the Memorial Day weekend. Instead of jarred marinated veggies I hit the "olive bar" at our favorite local natural food store and was able to customize the recipe to our preferences. I skipped the salami and pepperoni (not a fan) although I know the husband would have liked it. I added marinated: olives, garlic, whole pearl onions, variety of imported olives, capers, etc in addition to the other vegetables indicated. Corkscrew pasta is a good choice and works well for this type of salad. The cheese was freshly grated and I included some asiago as well. Very easy and well received by all in attendance. I served the pasta salad over fresh arugula greens and topped with fresh Italian parsley from the herb garden. Prepared for the FYC tag game. Thank you for posting!
I scaled this back for 1 serve and used fettucine and also added some red capsicum/bell pepper and the dressing was one of the best I have had, thank you ahmafor3 for a great side dish, made for Alphabet Soup tag game.
What a great "pasta Caesar salad". I had to look up what cos was, and found that it was romaine, which definitely gave this a nice added element I don't think I have ever had in a pasta salad before. We did not add the hard boiled eggs (personal preference) or anchovies (allergy reasons), and used about half the dressing. It was enough for us, giving it a wonderful subtle flavor. I could see some people liking the full amount of dressing for a stronger flavor, especially if they favor a lot of dressing on their salad. All the ingredients are so good together here; the bacon and avocado are real stars!
The ingredients blended really good together. I made it the night before to let the flavors mix. I liked the tuna and egg together, and we will have this again. I made it for a baby shower and it was almost gone when it was time to go home.
Awesome pasta salad! Love the fact that there is no mayo in this. Made half the recipe for the two of us. Used fresh eggs that did not peel well, so chopped the egg whites and could not find the wagon wheel pasta so used shells. I do think that this salad would benefit from some fresh herbs (basil & oregano) and garlic, just my opinion. You were so right about munching on the meatballs!!
