Step 1: Blueberry Ice Cubes ... First remember, all ice cube trays can vary in size. Add 3-5 blueberries (cleaned and stems removed) in each cube, then fill with the grape juice. Freeze at least 8 hours before using. You want to end up with 32-40 cubes (or 4-5 cubes per glass). If you can make more, why not? They will NOT go bad.
Step 2: Peaches ... I actually like to use frozen peaches for the drink; but fresh, for the garnish. The frozen peaches are easy to dice; and, the semi frozen peaches, add a nice coolness to the drink. I prefer a fresh peach, sliced as a garnish.
Step 3: Spritzer and Serve ... I really prefer to serve this per glass - it just works so much better. In a tall glass - add 2 tablespoons of the diced peaches, a couple of mint leaves (rubbed between your fingers to bring out the natural oils), 4-5 blueberry ice cubes, 3/4 cup wine; and, finish with the seltzer (club soda). Garnish with a fresh peach slice and mint sprig.
Step 4: For something fun - make a skewer of diced peaches and blueberries to add to the drink vs a peach slice. You could also add other seasonal fruit as well; raspberries, strawberries, or blackberries, etc. Remember, use seasonal fruits.
Step 5: A perfect summer drink. And for those who do NOT drink alcohol. Simply serve this with club soda. Just as good ... and just as refreshing, light, and delicious - ENJOY!
