Step 1: Mix together the tomato, feta, ham, onion and chopped parsley, set aside
Step 2: In a separate bowl whip together the eggs and milk season with salt and pepper
Step 3: Melt the butter in a large skillet over medium heat.
Step 4: Pour in the egg mixture, tilting the pan to let the egg cover the whole surface.
Step 5: Cover the pan. cook until it starts to set
Step 6: Add the feta, ham mixture, fold in half
Step 7: Do not over cook the omelet
Step 8: Cut in half and slide onto 2 plates
Step 9: Garnish with parsley
