White Chocolate Cheesecake Bars (with an Oreo Crust)

Ingredients
- 12 Oreo cookies (sandwich kind)
- 2 tablespoons melted butter
- 2 packages (8 ounce each) cream cheese, softened
- 3 ounces white chocolate
- 1/2 cup sugar
- 2 eggs
- 1 1/2 teaspoons vanilla
- 1/3 to 1/2 cup strawberry preserves (or jam)
How to Make

Step 1: Preheat the oven to 350 degrees

Step 2: In a food processor, blend the Oreo cookies until finely crushed. Add the butter and blend.

Step 3: Press the crumbs into a 9x9 pan packed firmly.

Step 4: In a bowl, mix the cream cheese, sugar and vanilla till smooth.

Step 5: Melt 2 squares of the white chocolate and add to the cream cheese and mix well. Add the eggs one at a time and blend well.

Step 6: Pour over crust and bake in preheated oven for 30 minutes or until the center is almost set.

Step 7: Let cool for 10 minutes.

Step 8: Spread strawberry preserves over the top. Melt the remaining square of chocolate and drizzle over the top.

Step 9: Place in the fridge and let cool for 4 hours.

Step 10: Slice into squares and serve.
