Step 1: Place all the ingredients except the buns in a bowl and mix well with a fork.
Step 2: Divide the mixture into 4 or 6 equal portions for burgers. Shape each portion into a patty.
Step 3: Place the patties on a parchment-lined sheet pan or large plate, cover, and chill in the refrigerator 6 hours or overnight.
Step 4: Heat the oil in a large, heavy skillet over medium-high heat.
Step 5: Working in batches so as not to crowd the skillet, add the patties and cook for 5-6 minutes each side until golden brown and cooked through.
Step 6: Transfer the patties to a warm serving plate and serve immediately with the buns and the lemon wedges for squeezing over the burgers
