Step 1: Rinse the peanuts, still in their shells, under cold water; drain.
Step 2: Place in a large crock pot (mine is 6 quarts) along with the salt (add other seasonings, like Cajun spice, if desired), then cover completely with water, all the way to the top (mine took about 10 cups to start).
Step 3: Stir the nuts so everything is wet; don't worry about the nuts floating on top; it will appear very full.
Step 4: Turn the crock pot to HIGH and allow to slow cook 2 hours.
Step 5: Turn the setting to LOW and give the nuts a stir, adding another cup or so of water; it might not look like it needs more because the nuts swell and float, but it likely needs a bit at this point.
Step 6: Allow to cook all through the day and possibly the night, checking about every 6 hours or so to add more water as needed.
Step 7: The water gets absorbed into the nuts as they cook and if you don't add more water, they will become too salty.
Step 8: Mine took about 20 hours total before they were soft enough to eat.
Step 9: They should be salty, but some like even more salt, others prefer less - it will take some experimenting on your part to get the right level of seasoning.
