Step 1: Heat a heavy bottomed saucepan and drizzle with a bit of vegetable oil.
Step 2: Add garlic and red pepper flakes and cook for a minute, until garlic is soft.
Step 3: Add butter and allow melting.
Step 4: Whisk in flour and keep whisking until flour is fully cooked and no longer white.
Step 5: Add milk and whisk until thickened.
Step 6: Lower heat and add parmesan cheese; mix well.
Step 7: Add sour cream, spinach and bacon; cook until warmed through.
Step 8: Season to taste and serve over your favourite hot cooked pasta noodles.
