Step 1: Fruit ... Use the freshest fruit you can find. Frozen fruit doesn't work well for this recipe. Slice the fruit in pretty thin wedges. They will only be on the grill for 5 minutes; and, you want them to warm up, but not cook.
Step 2: Cheese Topping ... Add the mascarpone, ricotta, honey, and almond extract to a small bowl and whisk to combine. If you want a really smooth consistency, you can add it to a food processor, but I don't find that's necessary. That is up to you. I use between 1/2 a 1 teaspoon of the extract; it is really up to you how much you use.
Step 3: Pizza Crust ... Now, I really prefer this on a outdoor grill, it just works best. However, this can also be done in the oven on a pizza stone if you want. This, is just one of those recipes that benefit from cooking on a grill.
Step 4: Prepare your dough, and roll it out into small individual pizzas - I like it fairly thin, but don't worry if it is perfectly round, 'rustic' is a good thing. As mentioned, I prefer to make small pizzas verus 1 large pizza; but, make what you prefer. After you have rolled out your dough, lightly brush the top with olive oil.
Step 5: Grill ... Make sure you grill is hot, charcoal or gas both work great. Add your pizza dough to the grill, oil side down; then, immediately brush the other side with oil. Keep an eye on these. You only want to pizza to grill 30-60 seconds to get some good grill marks and lightly cook. Flip, and cook the second side just like the first. Then remove the pizza to a baking sheet. The crust will continue cooking on the grill after you top it with the cheese and fruit.
Step 6: Cheese Topping ... As soon as the pizza comes off the grill, spread the topping over the warm pizza crust and top with the fruit. I like to 'make it look pretty' and, alternate peach and plum slices, but you can top it however you want.
Step 7: Back to the Grill ... Add the baking sheet with the pizzas to the grill for approximately 5 minutes to finish baking the crust; and, warm up the fruit.
Step 8: Finish, Serve, and ENJOY! ... Transfer your pizzas to a serving platter and garnish with the almonds and fresh mint. Slice and dig in.
Step 9: Note: For entertaining. Make the pizza crusts ahead of time. You can even finishing baking them on the baking sheet (without any toppings). Then, when ready to serve; simply top your pizza with the cheese and fruit, back on the baking sheet, and on the grill. About 5 minutes to warm up. In 10 minutes, you can have a fresh grilled dessert.
