Step 1: Preheat oven to 350°.
Step 2: In a large bowl, combine vegetables, soup, 1/2 cup swiss cheese, sour cream, pepper, pimento and 1/2 of the can of fried onions.
Step 3: Pour into a 1 quart casserole dish. Bake covered for 30 minutes or until veggies are done. (hot and bubbly)
Step 4: Sprinkle remaining cheese and onions in diagonal rows across the top.
Step 5: Bake uncovered 5-10 minutes or until the onions are toasted and the cheese has melted.
