Step 1: Prepare pie crust so it can chill while you prepare filling.
Step 2: Peel, core and slice apples. Toss in large bowl with lemon juice.
Step 3: Mix together sugars, cinnamon and flour. Reserve 2 tablespoons of white sugar. Sprinkle over apples and toss to coat.
Step 4: Roll out half of pastry and place in 9" deep dish pie pan. Ease to fit. Leave pastry hanging over edge.
Step 5: Spoon filling into prepared pastry. The dish should be full with a mound in the center. Dot with the butter.
Step 6: Roll out second half of pastry. Place on top of filling. Seal and pinch edges. Cut off excess pastry from sides. Cut slits or a pattern in the top to allow venting. Dust top with remaining white sugar.
Step 7: Place pie on a baking sheet to catch drips while cooking. Bake at 425 degrees for 15 minutes. Lower oven temperature to 350 degrees and bake for an additional 40 minutes.
Step 8: Remove from oven. Cool at least 2 hours before serving to allow filling to set.
