Step 1: Vinaigrette ... Add all the ingredients to a small measuring cup/bowl and mix or whisk to combine. Personally, I love to use a tupperware container. Just add everything, cover, and shake - it works great! But make the dressing ahead, and just refrigerate until ready to use. It is best to make an hour or more ahead if possible.
Step 2: Salad ... Prepare this ahead too, because the cheese only takes minutes to prepare. Make sure your salad is ready. Add the arugula or baby greens to a bowl, along with the tomatoes, scallions, cucumber, and radish; then, toss to combine. Add 1/2 of the dressing and toss. Plate the greens family style; or, on individual plates.
Step 3: Cheese ... Add the sesame seeds to a small dish and press each of the cheese slices (one side only) into the sesame seeds. Add the oil to a small saute pan, (nonstick works best), and bring to medium high heat. Add the cheese, seed side down, and cook 1-2 minutes until lightly golden brown, then flip. Continue to cook another 2 minutes until you get a nice browning; then it's done.
Step 4: Finish, Serve, and ENJOY! ... Top the salad with the warm grilled cheese slices, and drizzle with the remaining vinaigrette. A simple, but upscale salad!
