Step 1: Preheat oven to 350 degrees F.
Step 2: Grease muffin pan or use paper baking cups.
Step 3: In a large bowl blend all ingredients together including the juice from the tomatoes.
Step 4: Spoon batter into muffin cups; 3/4 full.
Step 5: Bake in preheated oven until toothpick inserted into center of a muffin comes out clean, 20 to 25 minutes.
