Step 1: Soak beans overnight in enough water to cover, then drain the next day.
Step 2: Place beans in a small crockpot with remaining ingredients.
Step 3: Cover and cook on low for about 4 hours or until beans are tender.
Step 4: Drain cooked beans and reserve liquid.
Step 5: Season beans to taste with salt and puree in a food processor or mash with a potato masher.
Step 6: Sprinkle with cheese, if desired, before serving.
