Step 1: Pasta ... Cook the pasta according to package directions in plenty of salted water. Once the pasta is cooked; drain and rinse under cold water to stop the cooking process. Drain and set to the side to cool.
Step 2: Dressing ... Add all the ingredients to a small bowl and whisk well. I prefer to use a small 'tupperware' type of container - just add all the ingredients, shake, and store. That way, if you don't use all the dressing, you can just refrigerate the leftovers, and use later. I tend to lightly dress my salads; so, I usually have a bit leftover.
Step 3: Salad ... Add the olives to the cooled pasta along with the onions, and parmesan cheese; and, toss to combine.
Step 4: Romaine ... Lightly drizzle or brush the romaine on both sides with olive oil, and season lightly with salt and pepper. Grill on an outdoor grill or grill pan for 3-4 minutes per side on medium high to high heat. You want to get a nice char; but, you don't want it too SOFT or limp - especially the outside leaves. You want it warm with a nice char taste. Remove from the grill and chop into bite size pieces.
Step 5: Finish and ENJOY!... Add the chopped grilled romaine, croutons, and some of the dressing to the pasta and toss. Add as much dressing as you like. Everyone dresses their salad differently.
Step 6: Serve and ENJOY! ... Top with the extra parmesan cheese and a few lemon wedges and serve. As mentioned, add chopped cooked chicken to the salad to make a main dish. It is easy; but mostly, a nice change from a heavy pasta dish or the basic salad. Really delicious!
