Step 1: Place the potatoes and chopped rosemary in a pot and cover with water; bring to a boil, cook through and drain.
Step 2: Meanwhile season the ground pork with salt and pepper and cook with onions until pork is cooked through.
Step 3: Mix all ingredients together and refrigerate; allow cooling completely.
Step 4: Stuff the bird and cook.
