Step 1: Simmer pastrami in broth until hot.
Step 2: Divide meat among bread, using 4 ounces for smaller sandwich, and 8 ounces for large.
Step 3: Add cheese, mustard, pickles, and onions to taste.
Step 4: Spread bread with soft butter and grill sandwich until toasty and crisp if desired.
Step 5: Serve warm.
