Step 1: Focaccia ... This is supposed to be a quick cook recipe, so take advantage of a store bought bread. These days, there some wonderful ones right in your local grocery store. Even Walmart carries them these days; along with Trader Joe's, Costco, Sams, etc. I use a plain or garlic focaccia since we are using a herb flavored goat cheese. If using a plain focaccia, lightly brush with olive oil and then rub with the garlic halves. Not necessary if using a garlic flavored bread.
Step 2: Toppings ... Spread the goat cheese on the bread, depending on the size of your bread, about 4-6 oz - not too heavy. Then top with the tomato halves, and sliced shallots.
Step 3: Bake ... You can bake this on a pizza stone or you can use a baking sheet. Since the bread is already cooked; I prefer to use a baking sheet lined with parchment paper for easy clean up. Bake at 350 degrees for 15-20 minutes on the middle shelf until the tomatoes begin to "shrivel," the onions start to caramelized, and the edge of the bread is golden brown.
Step 4: Salad ... Toss the arugula and basil in a bowl with a light drizzle of olive oil and lemon juice (to taste); then, season with salt and pepper.
Step 5: Finish ... Top the warm pizza with the arugula salad; then, lightly drizzle with balsamic vinegar. Serve and ENJOY! Perfect summertime food.
