Step 1: Broth ... Add the peanut oil to a pot and bring to medium high heat. Then add the curry paste and cook a couple of minutes until you can smell it - stir often, you do NOT want it to burn. Then, add the broth, ginger, red pepper flakes, and bring to medium heat (just under a boil). Then add the coconut milk and lime juice; reduce the heat to medium low, and simmer to heat everything through.
Step 2: Noodles and Chicken, Shrimp or Pork ... As the broth simmers, cook the noodles according to package directions. The last minute, add the chicken, shrimp, or pork; just to heat through. Drain, return to the pot, add the oil and toss; then, set to the side. Cover to keep the noodles and chicken, shrimp or pork warm.
Step 3: Garnishes ... Prepare the garnishes. These are all options; so, pick which ones you like best.
Step 4: Serve and ENJOY! I like to serve all the garnishes separate in bowls so everyone can help themselves and create their own noodle bowl. Garnishes are what make these bowls. A mix of crisp, fresh, savory, and crunchy, etc is what makes these so good - so have fun and be creative.
Step 5: Serve ... Add the noodle mix to the bowls, ladle the broth over the noodles; then, let each person top their bowls with their favorite garnishes. Make sure to include the lime wedges - it is great squeezed over the noodles. Create your favorite combination and ENJOY!
