Step 1: Preheat oven to 375 degrees F.
Step 2: Place pie shell on cookie sheet and partially bake for 10 minutes. Remove from oven and reduce temperature to 350 degrees F.
Step 3: While the pie shell bakes, saute the onions over medium heat in the olive oil until dark brown, 10- 15 minutes. Add spinach and green onions and cook until the spinach is wilted. Set aside to cool slightly
Step 4: Sprinkle the ham and gouda evenly over the warm pie shell. Place pie on a cookie sheet.
Step 5: Scrape onion spinach mixture over top.
Step 6: In a medium bowl, whisk the cottage cheese until smooth,
Step 7: Add salt and pepper, eggs, flour and milk. Whisk well.
Step 8: Pour into pie shell.
Step 9: Bake 40-50 minutes, until set and golden brown
Step 10: Cool 30 minutes before serving.
