Step 1: Stir the soy sauce, sugar and sake together in a small saucepan over low heat until the sugar dissolves, about 2 minutes.
Step 2: Add the sliced ginger and simmer for about 30 minutes.
Step 3: Remove and discard the ginger slices. The sauce will keep in a sealed container in the refrigerator for at least a month.
