Step 1: Beat together the eggs, sour cream (cottage cheese), milk and flour.
Step 2: Melt the butter in a medium sized skillet, add frozen peas, stir fry 1 minute.
Step 3: Add eggs, let them settle then gently stir.
Step 4: Add Parmesan, and oregano, season with salt & pepper.
Step 5: Continue cooking giving another stir or two until they are just cooked. Do not over cook
Step 6: Serve on a slice of toast, English muffin or a bagel - Enjoy
