Step 1: Sausage ... Cook the sausage on medium heat, breaking it up as it cooks. Once the sausage is cooked and golden brown, transfer to a plate lined with a paper towel to drain.
Step 2: Apples ... As I mentioned, you can peel the apples if you want; I didn't. Add the apples, sugar, and cinnamon to a small bowl and toss so all the apples are coated. Set to the side.
Step 3: Casserole ... In a large bowl, add the eggs, milk, and vanilla and mix well. Then add in the bread, sausage, apples, and 1 1/2 cups of cheese. Mix to make sure that everything is combined. Add the mix to a 13x9" casserole dish/pan, sprayed with a non-stick spray. Spread out the mix and top with the remaining cheese. Cover and refrigerate at least 4 hours; but, it is best to refrigerate over night.
Step 4: Bake ... In a 325 degree oven, middle shelf, uncovered for 40-45 minutes until the center is set. Stick a knife in the center, and if it comes out clean, it is done. Remove, cover with foil, and let it rest 10 minutes before serving.
Step 5: Serve ... Finish by serving with warm maple syrup. It is absolutely delicious - a perfect mix of sweet and savory. ENJOY!
