Step 1: Squeeze block of tofu over sink and remove as much water as possible; crumble pieces into bowl. Sprinkle with lemon juice.
Step 2: Mix in next 6 spices, celery, onions and fresh parsley; allow to chill for 20 minutes.
Step 3: Add pickle relish, mayonnaise; Cover and chill about an hour.
