Step 1: In a 4 quart Dutch oven, cook garlic in hot oil for 30 seconds.
Step 2: Stir in canned tomatoes, beer, water, tomato sauce, chili powder, oregano, mustard, cumin, pepper and hot pepper sauce.
Step 3: Stir in beans; bring to a boil; reduce heat, cover and simmer for 10 minutes.
Step 4: Stir in corn, return to boiling; reduce heat, cover and simmer another 10 minutes.
Step 5: Top each bowl of chili with 2 tablespoons of shredded cheese, if desired.
