Step 1: Brush a large baking sheet with about 1 tablespoon of oil, just make sure there's enough oil on your baking sheet so the breaded slices won't stick.
Step 2: In a shallow bowl whisk the egg white with water.
Step 3: First dip the eggplant slice in the egg whites, then coat in the breadcrumbs on both sides.
Step 4: Bake in a preheated at 400 degrees F turning once, about 22-25 minutes, if you like them crispy bake a little longer just watch they don't burn. Serve with marinara sauce for dipping.
