Step 1: Mix together the burger meat, salt, pepper and tex-mex spice. Form 3 patties
Step 2: Heat a skillet lightly oiled, high heat, cook one side of the burger for 3 minutes, flip the butger, cover, turn heat to medium and continue cooking for about another 2 minutes, flip the burger again, leave it covered turn heat to just above low or until done (160F) (If you are adding mushrooms I add them to the pan after the first flip)
Step 3: In another pan heat the tablespoon oil, medium heat, add onions cook and stir for about 10 minutes or until golden, add BBQ sauce, mix well
Step 4: Assemble burger, divide the onions between the buns, add a burger, slice of cheese, tomato & lettuce. Add any other condiments that you like
