Step 1: Preheat broiler
Step 2: Using a 10" ovenproof skillet pan heat the oil and cook the veggies, hash browns and jalapeno over medium heat for 10-12 minutes. Stir frequently
Step 3: Mix the eggs with water and dijon mustard, pour mixture over the veggies, cook until almost set. Season with salt & pepper.
Step 4: Sprinkle on the cheese and broil for 5 minutes or until the cheese has melted and it is golden on top. Serve and enjoy
