Step 1: Meat and Vegetables ... As I said, you can make up any combination you like, but just make sure that the meat is cooked and diced fine. And the vegetables, I just make sure to dice fine as well - you want everything to be approximately the same size. Also, if using fresh tomatoes, zucchini, or summer squash, you need to use these in smaller quantities; and tomatoes do need to be seeded and the squeezed lightly. The reason for this, is they have a much higher water content, so you don't want to end up with a watery pie. Fresh or frozen spinach can be used as well. NOTE - If you want to make this vegetarian, just use the 1/4 cup which is meant for meat; and use vegetables instead.
Step 2: Bottom Layer ... Spray a deep 9" pie plate with a non-stick spray. Add the diced vegetables and meat. Top that with the cheese and set to the side.
Step 3: Egg Mix ... Add the eggs to a small bowl and mix well. Then add in the milk, Bisquick, seasoning, salt and pepper; and again, mix to combine. Pour over the meat and vegetables. Don't worry about filling it up to the top, it will not spill over during cooking.
Step 4: Bake ... Bake in a preheated oven at 400 degrees on the middle shelf for 25-35 minutes until a knife inserted in the center comes out clean. Once the pie is done, remove, and let it rest at least 5 minutes before serving.
Step 5: Serve ... This makes a fantastic breakfast, brunch, lunch, or a light dinner. I love to serve this with tomato slices, or a salad. ENJOY!
