Chocolate Cupcakes or Cake- Low Fat, Low Cholesterol

Ingredients
- 1 18.25 ounce chocolate cake mix
- 1 15 ounce can pumpkin
- 1 cup warm water
- 1/4 teaspoon cinnamon
- Frosting:
- 1 1 ounce package sugar free instant white chocolate pudding mix (or regular vanilla pudding)
- 1 1/2 cup skim milk
- 1 8ounce coolwhip, light
How to Make

Step 1: In a medium size bowl, using a hand mixer, mix cake mix, pumpkin, water and cinnamon until well blended.

Step 2: Batter will be thick.

Step 3: Pour into a greased 9x13 inch cake pan or cupcake liners.

Step 4: Bake at 350 degrees for 40 minutes for a 9x13, 25 minutes for cupcakes or until toothpick comes out clean.

Step 5: Remove from oven and cool completely.

Step 6: In a medium size bowl, mix pudding with milk, then fold in coolwhip.

Step 7: Frost cupcakes or cake.

Step 8: Keep refrigerated.
