Step 1: In a small bowl whisk together mustard and vinegar.
Step 2: Pour oil into mustard/vinegar mixture in a steady stream; whisking, until it is emulsified.
Step 3: Serve over salad greens, chopped vegetable salad or steamed vegetables.
Step 4: Leftover dressing keeps in the refrigerator for up to one week.
