Step 1: Line baking sheet with waxed paper or parchment paper, lay out two forks, set aside. In high sided, heavy bottom sauce pan combine water, sugar and spice (if using). Over medium heat, bring mixture to a boil.
Step 2: Add nuts. Cook and stir continuously until the water starts to evaporate and mixture takes on a syrup like appearance, sticking to the nuts. Mixture will start to form a ball.
Step 3: Working quickly, pour hot mixture onto prepared baking sheet. Separate nuts with the two forks. Allow to cool.
